Another quarantine meal plan under my belt and I’m starting to feel like a pro. We STILL have only gotten takeout twice through this ordeal and I’m pretty proud of myself for that. It helps when you’re capable of cooking super tasty food! 😉

I technically only meal plan for a family breakfast on Sundays – the rest of the week is leftovers or other regular breakfast food (ie: bagels, cereal, pop tarts, etc.) We do weekly meal prep for lunches on Sundays – enough for five weekday lunches for two adults. Recipes marked with an asterik are recipes that I have made before and my family has deemed delicious! 🙂

I don’t know where I found this – I tried and couldn’t find it again, but this is the ONLY buttermilk pancake recipe I use. It’s soooooo good!

1 1/4 cups flour
1 egg
1 1/4 cups buttermilk
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil
1 pinch salt

Preheat griddle to medium heat. (I own a Cuisinart Griddler and I LOVE it!)

In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda and salt and set aside.

In a small mixing bowl, whisk together egg, buttermilk and vegetable oil. Pour into flour mixture and stir until just combined.

Drop by 1/4 cups onto hot griddle and cook until golden brown on both sides.

I use this dough recipe for ALL my homemade pizzas. So start with that. Then I add white American cheese, provolone cheese, precooked Steak-umms (fancy, I know – do remember to PRECOOK these prior to adding to your pizza) and sliced green peppers and onions. Bake at 450 F for about 10 minutes. I treated myself to this pizza stone and this pizza peel and it 100% makes a difference in your pizza baking/eating experience! Bonus retro points if you serve it Pizza Hut style on a pan with a server!

Literally the easiest recipe ever and super tasty in salads or on its own!

Chicken breasts and a bottle of Italian dressing. Combine in a Ziploc bag and let marinade for a few hours. Drain and grill the breasts and enjoy!
